Not so much a feature but ease to implement, just launched with Zoho for my agency recently and though it's intuitive and I've used it before - taking a lot of time to ramp up the solution how I'd like it.
Ease of data hygiene and clear history. Most CRMs make it super easy to add custom fields, but a nightmare to figure out who changed a stage/field and when. Having an easy way to track history and keep data clean without needing a full-time admin makes a huge difference.

Biggest thing I’d want from any CRM: don’t force stage probabilities to be static defaults nobody ever touches. Almost every team runs on out-of-the-box percentages with zero connection to their real win rates, and that alone quietly wrecks forecast trust more than most UI decisions. If a new CRM made recalculating that from historical data dead simple, that’d be a real differentiator.
