We're trying to automate tracking for channel-wise outreach performance for our sales reps-owned accounts in HubSpot, across LinkedIn, email, and calling, without manually checking individual account activity timelines. Ideally, how many no of emails, calls, messages each + replies/outcomes in each channel. How are others in the community solving this today? Would love to know if there are any custom objects, workflows, or integrations that you've found helpful?

Emails and calls are logged into Hubspot activity but yet to figure out how to enable broader level tracking without checking the activity log. - let's say through custom properties. This is a part of the problem statement.
Linkedin messages, given there's no native integration, are not logged into hubspot. We might need to figure a third party integration to log the linkedin messages and replies.

Using Salesforce this is something that you can acheive. They have dashboards. Even in hubspot its achieveable. Given that Hubspot has restrictions on number of reports you can hold to build something like this. But salesforce has easy options to set up a dashboard and it can get updated every miniute and provide you real time understanding of what's happening.
